Green Mango Pickles

Ingredients
- 1 1/2 cups vinegar
- 1 1/2 cups water
- 3 cups sugar
- 5 sticks cinnamon
- 1 tablespoon whole cloves
- 1/4 teaspoon mace
- 1 teaspoon ginger, chopped
- 1/4 teaspoon nutmeg
- 6 cups green mangoes, 34 large slices uniformly about 1/4 inch thick
Recipe
- 1 combine all except mango and boil 5 minutes.
- 2 add mango and cook for 30-45 minutes or until tender and clear.
- 3 pack mangoes into hot, sterilized jars, add syrup and seal.
- 4 process in boiling water bath for 10 minutes.
