Tfaya (onion-raisin Confit)

Total Time: 45 mins Preparation Time: 15 mins Cook Time: 30 mins

Ingredients

  • 1 cup golden raisin
  • 1 cup hot water
  • 3 tablespoons olive oil
  • 3 medium onions, sliced thinly pole-to-pole
  • 1 teaspoon kosher salt
  • 1 1/2 tablespoons ground ginger
  • 3 cinnamon sticks, each 3 inches long
  • 1 pinch turmeric
  • 1 pinch saffron, crushed to powder
  • 3/4 teaspoon ground black pepper
  • 2 cups sugar

Recipe

  • 1 soak the raisins in the hot water.
  • 2 in a medium saucepan, heat the oil over medium heat until shimmering. add onions and salt and cook, stirring often, until soft, 8-10 minutes.
  • 3 add ginger, cinnamon, turmeric, saffron and pepper. cook, stirring often, 2 minutes.
  • 4 drain raisins and add to onions. add sugar and simmer until thickened, about 10 minutes. cool to room temperature, then refrigerate until needed. keeps about 1 week.
