Tfaya (onion-raisin Confit)

Ingredients
- 1 cup golden raisin
- 1 cup hot water
- 3 tablespoons olive oil
- 3 medium onions, sliced thinly pole-to-pole
- 1 teaspoon kosher salt
- 1 1/2 tablespoons ground ginger
- 3 cinnamon sticks, each 3 inches long
- 1 pinch turmeric
- 1 pinch saffron, crushed to powder
- 3/4 teaspoon ground black pepper
- 2 cups sugar
Recipe
- 1 soak the raisins in the hot water.
- 2 in a medium saucepan, heat the oil over medium heat until shimmering. add onions and salt and cook, stirring often, until soft, 8-10 minutes.
- 3 add ginger, cinnamon, turmeric, saffron and pepper. cook, stirring often, 2 minutes.
- 4 drain raisins and add to onions. add sugar and simmer until thickened, about 10 minutes. cool to room temperature, then refrigerate until needed. keeps about 1 week.
