Sumptuous Broccoli

Ingredients
- Servings: 4
- 2 lbs broccoli, cut into florets
- 2 large tomatoes, coarsely chopped
- 1/4 medium onion
- 2 garlic cloves
- 2 tablespoons olive oil
- 1/2 cup vegetable stock
- 1 bay leaf
- 1/2 teaspoon cumin
- 1/2 teaspoon salt
- 1/8 teaspoon cinnamon
- fresh ground pepper, to taste
- 1 pinch sugar
Recipe
- 1 blanch the broccoli for 2 minutes, drain and set aside.
- 2 puree tomatoes, onion, and garlic until smooth.
- 3 heat olive oil in a skillet.
- 4 add puree and cook for 1 minute.
- 5 add stock and spices, cook for 2 minutes, stirring occasionally.
- 6 add broccoli, cover, and cook over medium-low heat until broccoli is crisp-tender, about 6-8 minutes.
- 7 make sure to discard bay leaf before serving.
