Sumptuous Broccoli

Total Time: 30 mins Preparation Time: 15 mins Cook Time: 15 mins

Ingredients

  • Servings: 4
  • 2 lbs broccoli, cut into florets
  • 2 large tomatoes, coarsely chopped
  • 1/4 medium onion
  • 2 garlic cloves
  • 2 tablespoons olive oil
  • 1/2 cup vegetable stock
  • 1 bay leaf
  • 1/2 teaspoon cumin
  • 1/2 teaspoon salt
  • 1/8 teaspoon cinnamon
  • fresh ground pepper, to taste
  • 1 pinch sugar

Recipe

  • 1 blanch the broccoli for 2 minutes, drain and set aside.
  • 2 puree tomatoes, onion, and garlic until smooth.
  • 3 heat olive oil in a skillet.
  • 4 add puree and cook for 1 minute.
  • 5 add stock and spices, cook for 2 minutes, stirring occasionally.
  • 6 add broccoli, cover, and cook over medium-low heat until broccoli is crisp-tender, about 6-8 minutes.
  • 7 make sure to discard bay leaf before serving.
