Oatmeal Carrot Muffins

Total Time: 40 mins Preparation Time: 10 mins Cook Time: 30 mins

Ingredients

  • Servings: 12
  • 2 cups all-purpose flour
  • 1 cup oatmeal
  • 1 tablespoon baking powder
  • 1/2 teaspoon baking soda
  • 1/2 teaspoon salt
  • 1 cup brown sugar
  • 1 teaspoon cinnamon
  • 1/2 teaspoon nutmeg
  • 2 eggs
  • 1/2 cup vegetable oil
  • 1 1/2 cups plain yogurt
  • 1 teaspoon vanilla extract
  • 1 cup carrot, grated

Recipe

  • 1 preheat the oven to 350 degrees f.
  • 2 sift together the flour, oatmeal, baking powder, baking soda, salt, brown sugar, cinnamon and nutmeg.
  • 3 mix the eggs, oil, yogurt and vanilla in a large mixing bowl.
  • 4 stir in the carrots and then the dry ingredients.
  • 5 spoon into 6 jumbo or 12 regular-sized muffin cups.
  • 6 bake for 30 minutes.
