Sweet Potato Pudding

Total Time: 1 hr Preparation Time: 20 mins Cook Time: 40 mins

Ingredients

  • Servings: 4
  • 2 lbs sweet potatoes, peeled and cooked
  • 1/4 cup butter
  • 1 1/2-2 cups sugar
  • 3 eggs
  • 3/4 cup evaporated milk
  • 2 teaspoons vanilla
  • 2 teaspoons nutmeg
  • 2 teaspoons cinnamon
  • miniature marshmallow

Recipe

  • 1 add butter to hot potatoes. mash potatoes till smooth.
  • 2 add sugar; stir till well mixed.
  • 3 add eggs, one at a time. beat into mixture well, until all eggs have been added.
  • 4 stir in milk, vanilla and spices.
  • 5 pour into buttered 2 quart casserole.
  • 6 bake at 375 degrees for 30 minutes. top with marshmallows and bake till brown for 10-15 minutes.
