Algerian Carrots

Ingredients

  • 1 1/2 cups water
  • 2 pounds carrots, peeled and sliced
  • 5 tablespoons olive oil
  • 1 teaspoon salt
  • 1/2 teaspoon ground black pepper
  • 1/2 teaspoon ground cinnamon
  • 1/2 teaspoon ground cumin
  • 3 cloves cloves garlic, crushed
  • 1/2 teaspoon dried thyme leaves
  • 1 bay leaf
  • 1 teaspoon lemon juice

  • place a steamer insert into a saucepan, and fill with 1 1/2 cups of water, or just below the bottom of the steamer. cover, and bring the water to a boil over high heat. add the sliced carrots, reduce the heat to medium, and cover the pan again. steam until tender but not mushy, 4 to 6 minutes depending on the thickness of the slices. reserve 1/2 cup of the cooking liquid.
  • heat the olive oil in a skillet over medium heat. reduce the heat to low and stir in the salt, pepper, cinnamon, cumin, garlic, and thyme. cook the spices and garlic, stirring frequently, until fragrant, about 10 minutes. add the 1/2 cup reserved cooking liquid and the bay leaf, cover, and simmer for 20 minutes.
  • stir in the carrots, tossing well to coat with the spice mixture, and cook until heated through, about 2 to 3 minutes. sprinkle with lemon juice and remove the bay leaf before serving.

whole-grain blueberry scones

  • 1 cup blueberries
  • 3/4 cup buttermilk, plus more for glaze
  • 1 teaspoon demerara sugar for glaze

  • preheat oven to 425 degrees f (220 degrees c). line a baking sheet with silicone mat or parchment paper.
  • whisk together flour, baking powder, salt, baking soda, cinnamon, and nutmeg in a mixing bowl. mix in sugar.
  • grate frozen butter into dry mixture with a cheese grater, tossing occasionally to prevent butter pieces from clumping together. mixture should resemble coarse crumbs. if necessary, rub mixture between your fingers to break it down a bit more. add blueberries and toss to distribute evenly. stir buttermilk into dry mixture and stir just until dough is moistened.

  • 24 glazed doughnuts
  • 1 (14 ounce) can sweetened condensed milk
  • 2 eggs, beaten
  • 1 (29 ounce) can sliced peaches, not drained
  • 1 teaspoon ground cinnamon
  • 1 pinch salt
  • 1/2 cup butter, melted
  • 1 (16 ounce) package confectioners' sugar
  • 2 teaspoons vanilla extract

cantaloupe muffins with praline topping

  • beat 1 cup sugar and oil together in a bowl with an electric mixer until smooth. add eggs one at a time, beating well after each addition. beat pureed cantaloupe and vanilla extract into sugar mixture.

  • 12 pecan halves

  • preheat oven to 375 degrees f (190 degrees c). prepare 12 muffin cups with cooking spray or line with paper liners and prepare the liners with cooking spray.
  • put squash into a roasting pan with cut sides down. pour enough water into pan to fill 1/2-inch deep.
  • roast squash in preheated oven until flesh is easily pierced through with a fork, about 45 minutes. remove roasting pan and reduce heat to 350 degrees f (175 degrees c).
  • scoop hot squash into a large bowl and mash until no large chunks remain. stir sugar and butter into the squash.
  • whisk flour, oats, baking powder, cinnamon, nutmeg, allspice, and salt together in a bowl.
  • beat eggs, milk, sour cream, and vanilla extract together in a separate bowl. stirring constantly, add a spoonful of squash mixture into the egg mixture to temper it before adding egg mixture to the squash mixture; stir.
  • fold flour mixture into the squash mixture until just incorporated; spoon into muffin tins. top each with a pecan half.
