Mango Luscious Pie

Ingredients

  • 4 large ripe mangoes
  • 8 ounces cream cheese
  • 8 ounces cool whip free
  • 1/4 cup milk
  • 1 teaspoon cinnamon
  • 1 graham cracker crust

Recipe

  • 1 peel and slice mangoes, add cinnamon; set aside.
  • 2 beat cream cheese and milk till smooth.
  • 3 add cool whip and mix well.
  • 4 fold in mangoes.
  • 5 pour into crust.
  • 6 chill till firm.

Mixed-berry Crisp

Ingredients

  • 1 3/4 cups flour, plus
  • 1/3 cup all-purpose flour, divided
  • 2 1/2 cups sugar
  • 2 teaspoons ground cinnamon

  • 1 (1 lb) bag frozen blueberries, thawed,drained

  • 1 preheat oven to 375* f.

Turkey Chili

  • 2 lbs ground turkey
  • 1 (15 ounce) can kidney beans
  • 1 (15 ounce) can cannellini beans
  • 30 ounces diced tomatoes
  • 1 (8 ounce) can tomato sauce
  • 1 orange bell pepper
  • 1 large onion
  • 1 stalk celery
  • 1 tablespoon garlic
  • 1 teaspoon cumin

  • 1 egg
  • 1 tablespoon water
  • 3 cups pecan halves
  • 1 cup granulated sugar
  • 1 teaspoon salt
  • 2 teaspoons cinnamon

  • 1 preheat oven to 300°f
  • 2 line a jelly roll pan with foil. in medium sized bowl, combine egg with 1 tablespoon water and whisk until foamy. add pecans and stir until nuts are coated with egg . set aside.
  • 3 in another bowl, combine sugar, salt, and cinnamon. pour sugar mixture over moist nuts and stir to coat evenly.
  • 4 in preheated oven,melt butter in jelly roll pan. remove pan from oven and gently stir nuts into melted butter. spread nuts evenly and bake for 20-25 minutes, stirring occasionally. watch them so they don't burn.
  • 5 remove from oven and allow to cool directly in the pan.

Mixed-grain And Vegetable Stir-fry

  • 1 tablespoon vegetable oil
  • 1/2 cup chopped onion
  • 1 large garlic clove, minced
  • 1 tablespoon curry powder
  • 1 cup kashi or 1 cup other uncooked mixed-grain cereal
  • 1/2 cup lentils
  • 1 cinnamon stick (1 2-inch stick)
  • 2 (14 1/2 ounce) cans low sodium vegetable broth
  • salt
  • 2 tablespoons vegetable oil
  • 1 tablespoon minced fresh ginger
  • 2 garlic cloves, minced
  • 4 cups broccoli florets (about 1 lg. bunch)
  • 2 cups sliced carrots (about 3)
  • 2 tablespoons water

  • 4 in a measuring cup, make a glaze out of the oleo, oj, zest, cinnamon and sugar. mix until well dissolved. drizzle the glaze over the yam/parsnip mix – cover and bake @ 350 for 40-45 minutes.

  • 2 quarts dandelion flowers
  • 2 quarts water
  • 2 cups fresh raspberries
  • 1 lemon
  • 1/4 teaspoon cinnamon
  • 4 -5 cups sugar
  • 1/3 cup wine yeast

Recipe

  • 1 take the blossoms, remove stem and leaves, and boil in water.
  • 2 remove from heat and let stand overnight, then strain.
  • 3 then add lemon, raspberries, cinnamon and sugar (so its overly sweet to the taste).
  • 4 warm mixture over low flame until the sugar is dissolved (honey many be substituted in equal proportions).
  • 5 next, when the mixture is lukewarm, add active yeast which as been suspended in warm water.
  • 6 cover the pan with a towel and let it set for three days undisturbed.
  • 7 as you check it, visualize the energy in your wine increasing even as the bubbles are forming (a sign of fermentation starting).

  • 1 tablespoon flour
  • 1 tablespoon ground cinnamon
  • 5 granny smith apples, peeled and sliced

  • 1 (15 ounce) package of pillsbury refrigerated pie crusts

Recipe

  • 1 prepare piecrusts according to package directions, fit 1 piecrust into 9 inch pie plate.

  • 1 (28 ounce) can peaches, drained
  • 1/2 cup sugar
  • 1/2 cup brown sugar (packed)
  • 1 teaspoon cinnamon
  • 1/2 teaspoon nutmeg
  • 1/2 cup unsalted butter (melted)
  • 1 cup all-purpose flour
  • 1 cup sugar
  • 3 teaspoons baking powder
  • 1/2 teaspoon salt
  • 2/3 cup milk (room temperature)
  • 1 large egg (room temperature)
  • 1 teaspoon pure vanilla extract

Recipe

  • 1 preheat oven at 400 degree.
  • 2 line a 9"x13" pan with foil and set aside.
  • 3 for filling: place drained peaches in a medium sized pot, combine 1/2 cup sugar, 1/2 cup brown sugar, cinnamon and nutmeg and let simmer until sugars are dissolved. remove from heat and let cool.

Horchata De Almendra (almond Horchata) From Spain

Ingredients

  • 1/2 kg almonds (1 pound)
  • 1/2 kg sugar (may use 1/2 lb to 1 pound, desired)
  • 1 lemon
  • 1 cinnamon stick
  • 1 pinch salt
  • 2 1/2 liters water (warm)

Recipe

  • 1 the first step is to remove the skins from the almonds.
  • 2 the best way to do this is to simply buy them already skinless.
  • 3 if none are available, you will have to boil the skins off.
  • 4 put the almonds in a pot of boiling water and let sit until the skins become very soft.
  • 5 with time, the skins will dissolve or slide off easily when stirred.
  • 6 boiling the almonds is a pain.
  • 7 crush or otherwise pulverise the almonds into a coarse powder.
  • 8 if you boiled your almonds to get the skins off, then smash them (or put them in a strong blender while adding some water) into a mush.
  • 9 in a large bowl/container add the 2.5 liters of water with a pinch of salt.
  • 10 slice and add the lemon.
  • 11 now mix in the almond powder (or mush). cover the container and let it sit at room temperature for 2 hours.
  • 12 when the two hours are up, add the sugar and cinnamon stick.
  • 13 stir until sugar is completely dissolved.
  • 14 strain the liquid with a fine cloth.
  • 15 this removes all of the larger particles of almond.
  • 16 strain until texture is smooth (twice should do it).
  • 17 keep the drink in your fridge and it will stay good for at least five days.

  • 2 cups blackberries

Red Plum And Cinnamon Jam

  • 2 1/4 lbs red plums
  • 2 1/4 lbs sugar
  • 1 cinnamon stick, ground in a spice mill

  • 1 cut the plums in halves or quarters and remove the pits.

  • 1/2 cup southern comfort

Recipe

  • 1 combine southern comfort, orange juice, vanilla, cinnamon and nutmeg.
  • 2 spread pecans in a shallow dish.
  • 3 sprinkle with salt.
  • 4 pour liquid mixture over pecans stirring until all moistened.
  • 5 marinate 1 hour, stirring occasionally.
  • 6 sprinkle with 2 tbs brown sugar and stir til coated.

  • 10 toward the end of cooking watch them carefully as they will scotch if overcooked.
  • 11 test for doneness by cooking and tasting a couple of nuts.

  • 13 cool on wax paper separating with a fork as they cool.

Good Morning Oatmeal

  • 1 (7 ounce) package mixed dried fruit
  • 1/3 cup packed brown sugar

  • 6 oranges (or lemons)
  • whole cloves
  • decorative ribbon
  • 4 tablespoons ground cinnamon
  • 4 tablespoons ground cloves
  • 2 tablespoons ground nutmeg

  • 1/4 cup orrisroot powder (as preservative)

Recipe

  • 1 combine the spice mix ingredients.
  • 2 wash oranges.
  • 3 insert cloves into oranges in a decorative pattern (stripes, swirls, whatever strikes your fancy!).
  • 4 roll cloved oranges in the spice mixture within 24 hours and set in a warm place to dry, turning fruit daily.
  • 5 drying takes from two weeks to possibly a month.
  • 6 pomanders are completely dry when they are hard.
  • 7 remove pomanders from the spice mix, dust off a little, and tie with decorative ribbons. set out in a bowl, or you can use as christmas ornaments.

Mango Key Lime Pie

  • 2 cups graham cracker crumbs
  • 1/3 cup confectioners' sugar
  • 1/2 teaspoon cinnamon
  • 6 tablespoons butter, melted and cooled
  • 1/3 cup mango, pureed
  • 6 egg yolks
  • 1/2 up key lime juice
  • 2 (14 ounce) cans sweetened condensed milk
  • 1/2 cup mango, diced
  • 3 cups whipped cream

Recipe

  • 1 preheat oven to 350 degree.
  • 2 make crust: in large bowl, combine cracker crumbs, sugar, cinnamon and butter; mix well. press mix into a 10-inch pie pan, sides and bottom. set aside.
  • 3 make filling: in a food processor (or blender) process mango until pureed. add egg yolks, lime juice and the two cans of milk. mix, combining well. fold in the diced mango using a rubber spatula to keep the mango intact.
  • 4 pour mixture into crust and bake for 20 to 25 minutes. remove and cool pie completely. keep refrigerated until shortly before serving. top with fresh whipped cream.

  • 2 cups enjoy life trail mix
  • 2 cups enjoy life cinnamon crunch granola cereal
  • 1/2 cup butter
  • 1/3 cup brown sugar
  • 3 tablespoons honey or 3 tablespoons agave nectar
  • 1 teaspoon vanilla
  • 1 teaspoon cinnamon
  • 1/4 teaspoon nutmeg
  • 1/2 teaspoon salt
  • 2 teaspoons xanthan gum
  • 2 tablespoons tapioca flour

Recipe

  • 1 grease 8 x 8 inch pan. chop trail mix in a food processor until all seeds and fruit are in small pieces and transfer to bowl. grind granola in a food processor until it looks like fine crumbs. add granola crumbs to chopped trail mix and set aside. in a small saucepan over medium heat mix together the butter, brown sugar, honey, tapioca flour, xanthan gum, and vanilla until melted and well combined. pour mixture over the trail/granola blend, stirring to coat all pieces. add salt, cinnamon and nutmeg. stir well, then pour into prepared pan and press down flat. refrigerate for at least an hour before serving. makes 8 bars. keep refrigerated.

Ingredients

  • 1 (9 inch) unbaked pie shells
  • 1 cup brown sugar
  • 6 tablespoons flour
  • 1 cup half-and-half
  • 1 cup heavy whipping cream
  • 1/2 teaspoon vanilla extract
  • 2 tablespoons butter, melted
  • cinnamon

Recipe

  • 1 heat oven to 350 degrees. defrost a prepared pie crust or fit a homemade crust into a 9" pie pan.
  • 2 combine the brown sugar and flour in a bowl. remove 1/3 celsius of the mixture and reserve.
  • 3 spread the rest of the sugar mixture in the bottom of the unbaked crust.
  • 4 combine half and half, whipping cream and vanilla, in a large bowl. add the reserved dry ingredients and mix well.
  • 5 pour gently into the pie crust atop the sugar/flour mixture.
  • 6 top with the melted butter, and lightly sprinkle with cinnamon.
  • 7 bake for 50-60 minutes when it is done, the filling will be bubbly and lightly browned in places. cool completely, then chill.

Recipe

  • 1 thaw apple juice. pour into a bowl and thicken with corn starch - adding it a tablespoon at a time until it is thick. you may need more or less than the 4 tbs listed.
  • 2 pour apples into first crust.
  • 3 pour thickened apple juice over the top. sprinkle with cinnamon, dot with margarine, and seal 2nd crust over the top.
  • 4 bake at 250 for 40-45 minutes.

  • 1 add vanilla to pineapple juice in a large mixing bowl and stir well.
  • 2 chop larger dried fruit into bite sized pieces and add to juice. stir well. let sit for a minimum of one hour, stirring occassionly.
  • 3 whisk together eggs (or egg replacer) and then stir in honey. whisk well then stir into fruit mixture.
  • 4 add flaxseed and nuts to fruit mixture. stir well.
  • 5 mix together, flour, oats, baking powder and spices. stir well then add to fruit mixture in about three batches. stirring well between additions.
  • 6 lightly grease 12 x 15 glass baking dish. add mixture to dish and press down well.
  • 7 bake at 350 oven for about 40 to 45 minutes. do not overbake.
  • 8 remove from oven and allow to cool before removing from pan.
  • 9 cut into thin bars and store in airtight container.

Sugar Free Apple Cobbler

Recipe

  • 1 preheat oven to 350*f.
  • 2 melt the margarine in 9 x 13 inch pan, only enough to cover the bottom, let cool stir together flour, splenda, baking powder, and salt.
  • 3 gradually mix in the milk and vanilla (the batter may be thick, don't add more milk or water!) pour the batter into the pan over the margarine (don't stir).
  • 4 sprinkle with half of the cinnamon.
  • 5 place the apples ontop of the batter.
  • 6 sprinkle with remaining cinnamon.

  • 1 on low or medium-low heat, warm the milk, honey and pumpkin pie spice or english mixed spice on the stove for a few minutes, stirring to melt the honey (or dissolve the sugar) completely. {{warning!}}: if preparing for children, don't heat the milk too hot or it will burn their mouths!
  • 2 remove pan from heat and stir in the vanilla extract.
  • 3 carefully transfer the liquid to a blender and blend on high speed for at least a full minute or until the milk is light and frothy. you could also use a stick/immersion blender to froth the milk, if you prefer however yet another {{warning}}: *make sure your pot is deep enough or the hot milk will splatter*.

  • 1 heat the oil in a large saucepan over medium high heat.
  • 2 add the onion, garlic and ginger.
  • 3 saute until the onion is translucent, about 5 minute.
  • 4 add the tomatoes, oregano, chile pieces, vinegar, honey, and soy sauce.
  • 5 stir to combine and lower the heat to medium low.
  • 6 grind the whole spices (cardamom, cloves, fennel, cinnamon stick, and mustard seeds) in a spice grinder or for a workout in a mortar.

  • 1 using ice cream scoop, make four 1/2 cup scoops of ice cream and freeze until very firm, about 2 hours.
  • 2 meanwhile, in medium bowl combine crushed cereal and melted butter until blended.

  • 4 return coated balls to freezer and freeze at least one hour longer.
  • 5 when ready to serve, combine honey and cinnamon in small saucepan and heat over low heat until warm.

Southern Apple Crisp

  • 1 peel, core and chop apples. toss in a bowl with lemon juice to prevent darkening.
  • 2 in another bowl, combine brown sugar, cinnamon and nutmeg. stir into apples and set aside.
  • 3 in another bowl, combine flour, sugar and oats. cut butter in pieces and cut into flour mixture until it looks like crumbs. stir in nuts.
  • 4 butter a 10 x 7 baking dish. spread apples evening in dish and then sprinkle with crumb mixture.
  • 5 bake at 375 for 30-45 minutes or until apples are tender and topping is lightly brown.
  • 6 serve warm with vanilla bean ice cream!

Spicy Italian Plum Cake

  • 1 place plums in large saucepan with about 1 inch of water. bring to boil, reduce heat and simmer 5 minutes, or until soft. drain and cool.
  • 2 preheat oven to 350°f.
  • 3 butter and flour a 10-inch bundt pan (or tube pan).
  • 4 in a large bowl, cream butter and sugar together until light and fluffy. beat in eggs, one at a time, and continue beating until mixture is very light in color.
  • 5 sift flour with spices and soda. add to butter mixture in thirds, alternating with the milk. beat just until ingredients are incorporated.
  • 6 stir in plums and walnuts. pour batter into pan and bake 1 hour, or until cake begins to pull away from sides of pan. let cool in pan 5 minutes. turn out onto wire rack and cool completely before frosting.

Mixed Vegetable Tagine

  • 1 tablespoon olive oil
  • 1 large onion, thickly sliced
  • 2 large garlic cloves, finely chopped
  • 1/2 teaspoon ground cumin

  • 1 teaspoon ground ginger
  • 1 1/2 teaspoons harissa
  • 2 tablespoons clear honey
  • 1 kg seasonal vegetables, peeled and cut into chunks (such as half a small butternut squash, 2 large carrots, 3 medium parsnips and 1 large sweet potato)
  • 600 ml hot vegetable stock
  • 350 g quorn pieces or 350 g diced tofu
  • 2 tablespoons chopped fresh coriander

  • 1 heat the oil in a large non-stick saucepan and gently cook the onion and garlic for 5-7 minutes.
  • 2 tip in the ground cumin, turmeric, cinnamon and ginger, harissa paste and honey and cook for another minute before stirring in the vegetables, stock and 1 tsp salt.
  • 3 bring to the boil, cover and simmer for 25 minutes.
  • 4 stir in the quorn or tofu and continue simmering for a further 5 minutes, then taste and add more salt and harissa paste if you like.
  • 5 scatter with the chopped coriander and serve.

Sugar Free Russian Tea

Southern Buttermilk Ice Cream

  • 1 combine all ingredeints into a large mixing bowl.
  • 2 stir until well combined.
  • 3 pour into an ice cream freezer.
  • 4 freeze according to the manufacturer's instructions that came with your ice cream freezer.
  • 5 ice cream will be soft.
  • 6 for a firmer ice cream, remove the ice cream from the ice cream freezer and place in an air-tight container with lid.
  • 7 freeze for 8 hours or over night.
  • 8 ~note~ i normally freeze the inside cylinder from my ice cream machine for 48 hours before making ice cream. while this is not necessary, i find it helps in creating a more firm product.

Sugar Glazed Five Spice Pecans

  • 6 boil about 5 minutes, or until mixture is reduced by half.
  • 7 strain.

  • 2 1/2 cups unbleached all-purpose flour
  • 3 tablespoons confectioners' sugar
  • 1 teaspoon salt

  • 1/2 cup vegetable shortening, chilled and cut into small pieces
  • 1/3-1/2 cup ice cold water
  • 1/4 cup almonds, chopped fine
  • 1 tablespoon unbleached flour
  • 5 cups mangoes, peeled and cut into 1/2 to 3/4 inch pieces (4-5 large)
  • 1/2 cup sugar
  • 1 tablespoon almond extract
  • 2 teaspoons cinnamon
  • 2 tablespoons flour (or more depending on how wet mixture is)
  • 1 teaspoon lemon zest
  • 2 teaspoons lemon juice or 2 teaspoons lime juice
  • 1 egg, beaten with
  • 2 tablespoons water
  • whipped cream or ice cream, for serving

Recipe

  • 1 preheat oven to 350°f.
  • 2 prepare pie crust by mixing together flour, confectioners sugar, salt and lemon zest.
  • 3 cut butter and shortening into flour mixture to form coarse crumbs.
  • 4 sprinkle ice water over and toss until mixture starts to come together.
  • 5 gather it up and press to form ball.
  • 6 divide into 2 parts, form disks and wrap each in plastic.
  • 7 refrigerate at least 30 minutes.
  • 8 roll out half of dough and fit into a 9 inch deep dish pie pan.
  • 9 trim edges.
  • 10 weight and bake bottom crust until light golden brown.
  • 11 remove pie weights and sprinkle crust with almonds and flour and bake 5 minutes longer.
  • 12 allow to cool.
  • 13 prepare filling by combining mango pieces, granulated sugar, almond extract, cinnamon.
  • 14 flour, zest and juice.
  • 15 mixture should be moist but not wet.
  • 16 pour into prebaked crust.
  • 17 roll out remaining half of dough and fit over pie.
  • 18 crimp edges and brush top of pie with egg and water wash.
  • 19 cut vents in top and bake 45-50 minutes until crust is golden and filling is tender and bubbly.
  • 20 serve warm with whipped cream or ice cream.

Mango Pineapple Relish

Ingredients

  • 4 cups chopped seeded, peeled mangoes (about 8 small)
  • 3 cups chopped cored, peeled pineapple (about 1 medium)
  • 1/2 cup diced sweet green pepper
  • 1/2 cup diced sweet red pepper
  • 1/4 cup diced red onion
  • 1/4 cup cider vinegar
  • 1/4 cup lemon juice
  • 1/4 cup pineapple juice
  • 1 tablespoon sugar
  • 2 teaspoons cinnamon
  • 1/4 teaspoon ginger

Recipe

  • 1 prepare jars, lids and bands.
  • 2 combine all ingredients in a large saucepot. bring to a boil. reduce heat and simmer 20 minutes, stirring frequently.

  • 4 air bubbles. process jars in a boiling water bath for 15 minutes. adjust
  • 5 time according to your altitude.

Egyptian Sahlab Or Sahlep

  • 2 teaspoons cornstarch
  • 4 cups milk
  • 3 teaspoons sugar, to taste
  • 2 tablespoons rose water, or
  • 2 tablespoons orange blossom water
  • 2 teaspoons pistachios, finely chopped
  • 4 dashes cinnamon

Recipe

  • 1 mix cornstarch with two tablespoons of the milk until smooth.
  • 2 bring remaining milk to a boil, stir in the dissolved starch, whisking with a whisk so that the liquid gets smooth.
  • 3 simmer on low heat for about 10 minutes, stirring constantly, until milk thickens.
  • 4 stir in sugar.
  • 5 add rose water or orange blossom water.
  • 6 serve hot in cups or mugs, garnish with chopped pistacchios and cinnamon.

Elderberry Cough Syrup

Ingredients

  • 2 cups filtered water
  • 4 ounces fresh elderberries (or 2 oz. dried)
  • 1 cinnamon stick
  • 1 teaspoon ground cloves
  • 1 1/2 cups sugar

Recipe

  • 1 simmer the three above ingredients in 1 pint (2 cups of water) for 20 minutes.
  • 2 let stand for 1/2 hour.
  • 3 strain through a sieve pressing well.
  • 4 then, add enough water to the simmered ingredients to bring the volume back up to 1 pint of liquid.
  • 5 add the sugar and gently heat to dissolve the sugar in the hot liquid.
  • 6 allow to cool and then pour into dark bottles and keep somewhere cool.
  • 7 dosage: 2 teaspoons in a little water 3 times a day.

Mushrooms Stifado (a Vegetarian Greek Stifado)

  • 250 g pearl onions, peeled left whole

  • 1/3 cup olive oil
  • 1/3 teaspoon ground cloves
  • 2 -3 bay leaves
  • 1/3 teaspoon ground cinnamon

  • 1 in a pot heat olive oil and cook onion and garlic stirring for 3-4 minutes. add the mushrooms and the onions. cook in high heat for 5-6 minutes. add the wine and after 2 minutes the tomatoes. salt and pepper stirring carefully.
  • 2 transfer the onions and mushrooms in a pyrex and cook in a preheated oven at 390f for 45 minutes.

Tomato Catsup

Ingredients

  • 12 1/2 lbs ripe tomatoes
  • 2 medium onions
  • 1/4 teaspoon cayenne pepper
  • 2 cups cider vinegar
  • 1 1/2 tablespoons broken cinnamon sticks
  • 1 tablespoon whole cloves
  • 3 cloves garlic, finely chopped
  • 1 tablespoon paprika
  • 1 cup sugar
  • 2 1/2 teaspoons salt

Recipe

  • 1 wash and slice tomatoes and boil until soft.
  • 2 into another kettle slice the onions.
  • 3 cover with a small quantity of water and cook until tender.
  • 4 run the cooked onions and tomatoes through a sieve.
  • 5 mix the onion and tomato pulp.
  • 6 add the cayenne pepper.
  • 7 boil this mixture rapidly until it has been reduced to about 1/2 original volume.
  • 8 place vinegar in an enamel pan; add a spice bag containing the cinnamon, cloves and garlic.
  • 9 allow this to simmer for about 30 minutes, then bring to boil.
  • 10 place cover on pan and remove from heat.
  • 11 allow this to stand in covered pan until ready to use.
  • 12 when tomato mixture has cooked down to 1/2 original volume, add mixture, of which there should be 1 and 1/4 cups.
  • 13 add the paprika, sugar and salt and boil rapidly until thick.
  • 14 this should require about 10 minutes.
  • 15 pour while boiling into sterilized jars to within 1/2 inch of top.
  • 16 put on cap, screw band firmly tight.
  • 17 process in boiling water bath 5 minutes.

Lemon Currant Biscuits

Egyptian Sweet Couscous Dessert

  • 1 prebaked and cooled 9-inch pie shell
  • 1 cup flour
  • 3/4 cup brown sugar
  • 1/4 teaspoon salt
  • 1/4 teaspoon ground cinnamon
  • 6 tablespoons cold unsalted butter, cut into small chunks
  • 1 cup maple syrup
  • 1/2 teaspoon baking soda
  • 1 large egg
  • 1 large egg yolk
  • 1/2 teaspoon vanilla extract

Recipe

  • 1 preheat the oven to 350 degrees.
  • 2 to make the crumbs combine the flour, brown sugar, salt, and cinnamon in a large bowl.
  • 3 add the butter and combine until the mixture becomes a sticky crumb-like texture.
  • 4 set it aside.
  • 5 make the maple filling by heating the maple syrup in a large bowl in the microwave until slightly warm.
  • 6 use a whisk to add the baking soda.
  • 7 beat together the eggs in a small bowl until just frothy.
  • 8 whisk the eggs and vanilla into the maple syrup.
  • 9 sprinkle half of the crumbs into the bottom of the pie crust.
  • 10 pour the maple filling on top of the crumbs in the crust.
  • 11 sprinkle the rest of the crumbs on top.
  • 12 bake the pie for 30 minutes, or until the pie has puffed up and turned golden brown.
  • 13 the crumbs from the bottom of the pie will rise to the top, and the pie should look slightly underdone, as the crumbs will absorb the remaining liquid, allowing the pie to set.

Southern Cinnamon Sugared Pecans

Total Time: 15 mins Preparation Time: 5 mins Cook Time: 10 mins

Ingredients

  • 1/4 cup evaporated milk
  • 1 cup sugar
  • 1/4 teaspoon ground cinnamon
  • 2 tablespoons water
  • 1/4 teaspoon vanilla
  • 3 cups shelled pecan halves

Recipe

  • 1 in a large sauce pan over medium heat, combine evaporated milk, sugar, water and vanilla.
  • 2 heat mixture, stirring often, until sugar is dissolved.
  • 3 add cinnamon and stir. some may float on top.
  • 4 add 3 cups of pecans to mixture and stir to cover.
  • 5 continue stirring pecans in mixture until pecans become coated well and mixture cooks away (gets absorbed/crystalized on the the pecans).
  • 6 spread hot coated pecans on wax paper; try to separate them as you spread them on the paper.
  • 7 let pecans cool completely.
  • 8 break apart pecans and store in air-tight container for up to 2 weeks.
  • 9 to give as gifts, put in decorative glass jars or decorative tins lined with wax paper.
  • 10 note: i've tried using brown sugar (1:1 with the sugar), but the pecans have a tendency to come out sticky and the sugars don't get 'crystalized'. i have not tried these with turbinado or unbleached cane sugar yet. if they don't turn out right, i'll have to keep them for myself !

  • 2 place the nuts on a flat tray and bake in a moderate oven for 5-8 minutes or until lightly roasted. place nuts in a lamington tin (28 x 18cm).
  • 3 beat the egg until soft peaks form, gradually beat in the sugar and cinnamon. stir in cooled melted butter and pour mixture over the nuts, mix well.
  • 4 bake in moderately slow oven for 30 minutes, making sure to stir nuts every 10 minutes.
  • 5 cool and store in an airtight container until ready to serve.

Orange-pineapple Wassail

  • 1 gallon apple cider or 1 gallon apple juice
  • 4 1/2 cups pineapple juice (fresh frozen)
  • 4 cups orange juice (fresh frozen)
  • 1 (12 ounce) can frozen lemonade
  • 2 (12 ounce) cans apricot nectar
  • 2 sticks cinnamon
  • 2 teaspoons whole cloves
  • 1 teaspoon whole nutmeg

Recipe

  • 1 combine spices and tie in cheesecloth; add to all ingredients in large dutch oven.
  • 2 bring to a boil.
  • 3 cover and simmer 30 minutes.
  • 4 uncover and simmer an additional 30 minutes.
  • 5 remove spices.
  • 6 this can be put in a crockpot to keep warm.
  • 7 serve hot.

  • 15 ounces pumpkin puree
  • 2 large eggs
  • 1 large egg yolk
  • 1 cup heavy cream
  • 1 tablespoon brandy
  • 3/4 cup lightly packed light brown sugar
  • 1 teaspoon ground ginger
  • 1 1/2 teaspoons ground cinnamon
  • 1/2 teaspoon salt
  • 1/8 teaspoon greshly grated nutmeg
  • 1/8 teaspoon fresh ground black pepper
  • 1/8 teaspoon ground cloves

Recipe

  • 1 place unbaked pie crust in 9" deep dish pie plate, trimming overhang and crimping. chill in refrigerator at least 30 minutes or up to overnight.
  • 2 position rack in center of oven and preheat oven to 400 degrees.
  • 3 line chilled pie shell with parchment paper and fill with dried beans or pie weights. bake until the sides have just set and look dry, 16-20 minutes. remove weights and parchment and bake until the edges are light golden and the bottom is pale and completely dry, about 5 minutes. let crust cool completely on a wire rack before filling.
  • 4 reduce oven heat to 325 degrees.
  • 5 in a large bowl, whisk the pumpkin, eggs, egg yolk, cream, and brandy.
  • 6 in a small bowl, mix the brown sugar, ginger, cinnamon, salt, nutmeg, pepper, and cloves. whisk the sugar mixture into the pumpkin mixture.
  • 7 pour the pie filling into the cooled pie crust. bake until the pie is set around the outside but still slightly wet and jiggly in the center, about 1 hour. let the pie cool completely on a wire rack and then refrigerate at least 2 hours and up to 2 days before serving.
  • 8 serve with brandied ginger cream: whip 1 cup heavy cream with an electric mixer on medium-high speed until it forms very soft peaks, about 2 minutes. add 2 tablespoons packed light brown sugar, 1 teaspoon ground ginger, and 1 teaspoons of brandy and continue whipping until it forms medium-firm peaks, about 30 seconds longer.

  • 5 grease and flour a large loaf pan or a 9x9" baking dish.
  • 6 preheat the oven to 350°f.
  • 7 bake for 35 minutes until done.
