Tomato Catsup

Total Time: 5 hrs Preparation Time: 2 hrs Cook Time: 3 hrs

Ingredients

  • 1 gallon tomato juice
  • 1 pint vinegar
  • 2 tablespoons salt
  • 1 cup sugar
  • 1 teaspoon red pepper
  • 1 teaspoon ground mustard
  • 1 cinnamon stick
  • 5 cloves
  • 5 whole allspice
  • 1/2 cup cornstarch

Recipe

  • 1 take 1/2 bushel tomatoes cut up in small pieces.
  • 2 cook strain
  • 3 and to each gallon juice add 1 pint vinegar.
  • 4 2 tablespoons salt.
  • 5 1 small cup sugar.
  • 6 1 level teasppon red pepper
  • 7 1 heaping teaspoon ground mustard
  • 8 cinnamon cloves and allspice
  • 9 tie spices in cloth
  • 10 remove when done
  • 11 cooking 2 hours
  • 12 then add 1/2 cup cornstarch(this is where i think the recipe gets hinky , i think its 2 much cornstarch for each gallon
  • 13 and then cook 15 minutes more
  • 14 bottle and seal.
