Cornish Game Hens With Honey

Total Time: 45 mins Cook Time: 45 mins

Ingredients

  • 1/2 cup olive oil
  • 1/4 cup red wine vinegar (i use regular wine when vinegar is not available)
  • 1/4 cup sherry wine
  • 1/2 cup honey
  • 1 tablespoon cumin, ground
  • 3/4 teaspoon cinnamon, ground
  • 1 1/2 teaspoons anise seed (i like to grind it)
  • 8 cornish hens
  • salt and pepper

Recipe

  • 1 combine oil, vinegar, sherry, honey, cumin, anise and cinnamon in a small heavy saucepan. simmer until mixture thickens slightly, stirring constantly (about 3 minutes).
  • 2 salt and pepper hens generously and bursh them with glaze.
  • 3 roast in 400 f oven until thigh juices run clearn when pierced (about 45-50 minutes). be sure to baste hens with glaze every 10 minutes.
