Cornish Game Hens With Honey

Ingredients
- 1/2 cup olive oil
- 1/4 cup red wine vinegar (i use regular wine when vinegar is not available)
- 1/4 cup sherry wine
- 1/2 cup honey
- 1 tablespoon cumin, ground
- 3/4 teaspoon cinnamon, ground
- 1 1/2 teaspoons anise seed (i like to grind it)
- 8 cornish hens
- salt and pepper
Recipe
- 1 combine oil, vinegar, sherry, honey, cumin, anise and cinnamon in a small heavy saucepan. simmer until mixture thickens slightly, stirring constantly (about 3 minutes).
- 2 salt and pepper hens generously and bursh them with glaze.
- 3 roast in 400 f oven until thigh juices run clearn when pierced (about 45-50 minutes). be sure to baste hens with glaze every 10 minutes.
