Spicy Loaf

Total Time: 1 hr 15 mins Preparation Time: 15 mins Cook Time: 1 hr

Ingredients

  • Servings: 10
  • 1/2 cup unsalted butter (4 oz.)
  • 1 cup sugar
  • 1/2 cup water
  • 1 cup raisins
  • 2 cups flour (mix of whole wheat & all-purpose)
  • 1 teaspoon baking soda
  • 1 teaspoon baking powder
  • 1/2 teaspoon salt
  • 1/2 cup plain yogurt
  • 1/2 cup chopped walnuts (or pecans or almonds)
  • 1/2 teaspoon crushed nutmeg
  • 1/2 teaspoon cinnamon
  • 1/2 teaspoon clove
  • 1/2 teaspoon cardamom

Recipe

  • 1 heat the butter, sugar, water, raisins and the seasonings, until bubbly.
  • 2 let the mixture cool for about an hour.
  • 3 mix the flour, baking soda, baking powder and salt.
  • 4 beat the flour mix, yogurt, and the nuts into the cooled down liquid mixture.
  • 5 grease and flour a large loaf pan or a 9x9" baking dish.
  • 6 preheat the oven to 350°f.
  • 7 bake for 35 minutes until done.
  • 8 healthy alternative: substitute all or part of all-purpose flour by whole-wheat flour and some semolina.
  • 9 add some pureed fruit like apples or bananas to reduce fat and sugar.
