Spicy Loaf

Ingredients

- 1/2 cup unsalted butter (4 oz.)
- 1 cup sugar
- 1/2 cup water
- 1 cup raisins
- 2 cups flour (mix of whole wheat & all-purpose)
- 1 teaspoon baking soda
- 1 teaspoon baking powder
- 1/2 teaspoon salt
- 1/2 cup plain yogurt
- 1/2 cup chopped walnuts (or pecans or almonds)
- 1/2 teaspoon crushed nutmeg
- 1/2 teaspoon cinnamon
- 1/2 teaspoon clove
- 1/2 teaspoon cardamom
Recipe
- 1 heat the butter, sugar, water, raisins and the seasonings, until bubbly.
- 2 let the mixture cool for about an hour.
- 3 mix the flour, baking soda, baking powder and salt.
- 4 beat the flour mix, yogurt, and the nuts into the cooled down liquid mixture.
- 5 grease and flour a large loaf pan or a 9x9" baking dish.
- 6 preheat the oven to 350°f.
- 7 bake for 35 minutes until done.
- 8 healthy alternative: substitute all or part of all-purpose flour by whole-wheat flour and some semolina.
- 9 add some pureed fruit like apples or bananas to reduce fat and sugar.
