Hot Lemonade With Rum

  • 3/4 cup dark rum
  • honey (optional)
  • lemon slice, rounds, for garnish

  • 1 in a medium saucepan combine water, lemon juice and sugar and simmer over low heat, stirring frequently, until sugar dissolves. stir in the rum.

  • 1 preheat oven on broiler setting.
  • 2 place peaches hollow side up in a pie pan.

  • 1 toss bananas in food processor with cinnamon. let sit about five minutes, until lightly thawed, and whiz until smooth. stir in dates and pecans. serve immediately. (if it gets too soft, you can put it in the freezer for about 10 minutes.).

  • 2/3 cup unsalted butter, melted
  • 1 1/4 cups sugar
  • 8 large eggs, separated
  • 1 tablespoon lemon zest
  • 1 teaspoon cinnamon
  • 1/4 teaspoon salt
  • 2 1/2 cups flour, sifted
  • 4 1/2 cups mixed blueberries or 4 1/2 cups raspberries or 4 1/2 cups blackberries or 4 1/2 cups strawberries
  • 1/3 cup powdered sugar
  • 1/2 cup ricotta cheese
  • 1/4 cup powdered sugar
  • 1 teaspoon vanilla extract
  • 2 cups whipping cream

Recipe

  • 1 preheat oven to 350 degrees.
  • 2 lightly spray an 11 inch removable bottomed tart pan with cooking spray.
  • 3 cream butter and sugar in a large mixing bowl.
  • 4 add egg yolks, one at a time, and continue mixing until smooth.
  • 5 add lemon zest and cinnamon.
  • 6 in a separate bowl, whip egg whites and salt until stiff peaks form.
  • 7 gently fold egg whites into egg yolk mixture.

  • 14 in small bowl, mix ricotta, powdered sugar, and vanilla until well blended.
  • 15 set aside.
  • 16 in a large bowl, whip cream until soft peaks form.
  • 17 add ricotta mixture and continue to whip until smooth.
  • 18 dust cake with powdered sugar and top with remaining fruit.
  • 19 serve with ricotta whipped cream.

  • 2 scoops vanilla protein shake mix
  • 2 bananas
  • 1 apple (cored with peel still on)
  • 1 teaspoon ground cinnamon
  • 2 tablespoons granola cereal (optional)

  • 1 cut the apple into 1/2 inch pieces.
  • 2 add all ingredients in order (except granola) into blender.
  • 3 mix until apple & banana are smooth (no chunks of apple floating around.).

  • 1 kg granny smith apple, peeled, cored and thinly sliced (approx. 6)
  • 1 lemon, rind finely grated, juiced
  • 120 g unsalted butter
  • 50 g walnuts, roasted and finely ground
  • 3 eggs
  • 165 g muscovado sugar (3/4 cup)
  • 110 g caster sugar (raw if possible, 1/2 cup)
  • 2 teaspoons vanilla essence
  • 100 ml milk
  • 150 g plain flour (1 cup)
  • 2 teaspoons baking powder
  • 200 g dried figs, finely chopped
  • 200 g pine nuts, roasted
  • 1 teaspoon ground cinnamon
  • 180 g honey (1/2 cup)
  • 1 lemon, juiced (strained)

Recipe

  • 1 combine apples, lemon juice and rind in a bowl, toss to coat and set aside.
  • 2 grease a 24 cm springform cake pan with 1 tbsp of butter and dust with ground walnuts.
  • 3 whisk eggs, 1/2 cup muscovado sugar, caster sugar & vanilla essence until pale and creamy. melt remaining butter and add to egg mixture with milk, flour and baking powder, then stir to combine.
  • 4 pour 1/3 of the mixture into prepared cake pan, arrange 1/3 of apples on top, scatter with half the figs and pine nuts. repeat, finishing with apples.

  • 7 towards the end of the cake's baking time, prepare the lemon syrup by heating the honey in a pan over medium heat and simmering for 5 minutes. remove from heat and stir through lemon juice.
  • 8 turn cake onto a platter, drizzle with warmed syrup.

Low Fat Fresh Peach Cobbler

  • 4 ripe peaches (skinned and sliced)
  • 2 tablespoons brown sugar
  • 2 tablespoons sugar
  • 1/8 cup water
  • 1/4 cup water
  • 1 teaspoon cornstarch
  • 1 cup jiffy mix baking mix, plus
  • 1 tablespoon jiffy mix baking mix
  • 1/4 cup fat-free half-and-half
  • 1/4 cup skim milk
  • 1/4 cup egg beaters egg substitute

Recipe

  • 1 cinnamon and sugar for shaking on top.
  • 2 combine 1/8 cup water, peaches, both sugars in saucepan.

  • 5 cups water
  • 1/2 cup honey
  • 4 tea bags, rose hips
  • 1 cup vanilla frozen yogurt

  • 1 remove skin from pineapple as well as all 'eyes'.
  • 2 cut pineapple crosswise into 8 thick rounds.
  • 3 remove core with small knife.
  • 4 in large skillet combine pineapple, water and honey.
  • 5 bring to boil; add tea bags or rose hips and lower heat to simmer.

  • 3/4 cup sugar
  • 3 tablespoons cornstarch
  • 3 tablespoons water
  • 1 teaspoon lemon rind, grated

  • 2 tablespoons unsalted butter
  • 1 egg, well beaten with
  • 1 pinch salt, for egg washing top of pie

  • 1 combine 1 cup berries with 3/4 cup sugar in pan.
  • 2 simmer on low heat until sugar is melted and mixture is very liquid; about 5 minutes.

  • 2 tablespoons smart balance butter spread
  • 1/4 cup sugar, divided
  • 4 apples, peeled cored and sliced

Recipe

  • 1 preheat oven to 375.
  • 2 brush crust with one tablespoon melted smart balance; sprinkle lightly with 2 t sugar. cut into 8 wedges.

  • 6 sprigs thyme
  • 4 tart apples, peeled, cored, and quartered

  • 5 tablespoons melted butter
  • 7 eggs, separated

  • 1 preheat oven to 375°f.
  • 2 in a 12-inch iron skillet, melt 2 t butter with the thyme sprigs over medium-high heat. add the apples and brown on all sides until just tender when pierced with a fork, 10-15 minutes.
  • 3 sprinkle with 2 t sugar and cook, gently stirring until the sugar dissolves and the apples caramelize, about 1-2 minutes more. remove the thyme and set the apples aside. wipe the skillet clean.
  • 4 in a large bowl, whisk together the vanilla pod and seeds with the melted butter, egg yolks, 1/2 c sugar, cinnamon, allspice, cake flour, and a pinch of salt. whisk in the milk until combined.

Tony's Famous Banana Cake

  • 3 bananas, that are very ripe
  • 1 cup demerara sugar, loosely packed
  • 2 eggs
  • 3/4 cup grapeseed oil
  • 1 1/2 cups all-purpose flour
  • 1 teaspoon baking powder
  • 1/2 teaspoon baking soda
  • 1/2 teaspoon salt
  • 1 tablespoon ground cinnamon
  • 1/4 teaspoon ground nutmeg
  • 1 cup walnuts, coarsely chopped

Recipe

  • 1 preheat the oven to 350 degrees f.
  • 2 in a large bowl, mash the bananas with a hand-help potato masher, leaving them chunky.
  • 3 add the sugar, eggs, and grape seed oil.
  • 4 continue to mash and stir with the potato masher until the ingredients are blended.
  • 5 sift the dry ingredients onto a piece of parchment paper and pour into the banana mixture.
  • 6 using the potato masher, blend gently until the flour is worked through.

  • 2/3 cup walnuts
  • 1/2 cup packed light brown sugar
  • 1/4 cup yellow cornmeal
  • 1/4 cup all-purpose flour
  • 3/4 teaspoon cinnamon
  • 1/2 teaspoon ground nutmeg
  • 5 tablespoons unsalted butter, chilled, cut into small pieces
  • 2 1/4 lbs granny smith apples, peeled, quartered, cored, cut into 1/2-inch-thick wedges (about 6 medium)
  • 1/2 cup sour cream
  • 1/4 cup sugar
  • 2 tablespoons all-purpose flour
  • 1 1/2 teaspoons ground cinnamon
  • 3/4 teaspoon ground nutmeg
  • 1/4 teaspoon ground cloves

Recipe

  • 1 for streusel topping: combine nuts, brown sugar, cornmeal, flour, cinnamon, and nutmeg in food processor and pulse on/off until nuts are finely chopped. add butter and process until small moist clumps form. (can be prepared 1 day ahead. cover and refrigerate.).
  • 2 for filling: position rack in center of oven and preheat to 375 degrees. toss apples with sour cream in large bowl to coat. mix sugar, flour, cinnamon, nutmeg, and cloves in a small bowl. sprinkle mixture over apples and toss to coat.
  • 3 transfer filling to prepared crust. sprinkle streusel topping over apples, covering completely. bake pie until apples are tender and streusel is golden, tenting pie if streusel browns too quickly, about 1 hour. transfer pie to rack and cool slightly.
  • 4 serve pie slightly warm or at room temperature (and definitely with some vanilla ice cream!).

Hot Pocket And Fried Pie Dough

Total Time: 42 mins Preparation Time: 30 mins Cook Time: 12 mins

Ingredients

  • 3 cups flour
  • 1 tablespoon sugar
  • 1 1/2 teaspoons salt
  • 1 teaspoon baking powder
  • 1/3 cup shortening
  • 1 cup milk (more if needed)

Recipe

  • 1 in a mixing bowl, sift the flour, sugar, salt and baking powder, together.
  • 2 cut in shortening.
  • 3 pour the milk into the flour mixture all at once.
  • 4 mix quickly and add additional milk if needed to combine all dry spots or flour if it is to sticky.
  • 5 lightly knead it to make a thick dough.
  • 6 let the dough rest for 10 minutes.
  • 7 cut the dough into 12 equal portions.
  • 8 on a lightly floured surface, roll the dough pieces into 5 or 6 inch circles.
  • 9 put two or three tablespoons of filling of your choice in the center of each round, moisten edges with milk to ensure seal.
  • 10 fold over and crimp the edges with a fork.
  • 11 fry a few at a time without crowding, in the hot oil, until golden brown.
  • 12 remove from the oil and drain on paper towels.
  • 13 notes: although this dough can be used to make homemade"hot pockets" the filling should be completely done before enclosing it in the dough.
  • 14 the dough will cook too fast to get the insides done.
  • 15 i find it best to place paper towels on a wire rack so the pies remain light and crisp and don't get soggy from the steam.
  • 16 if you are using the dough for fried pies, it will use one 21 ounce can @ approximately two tablespoons per pie.
  • 17 pies should be sprinkled as soon as they are removed from oil so the sugar will stick.
  • 18 (sugar and cinnamon mix is great on apple pies.).

Perfect (and Simple) Graham Cracker Crust

  • 1 1/2 cups graham crackers, finely ground
  • 1/3 cup sugar
  • 6 tablespoons butter, melted
  • 1/2 teaspoon ground cinnamon (optional)

  • 1 mix graham cracker crumbs, sugar, melted butter or margarine, and cinnamon until well blended . press mixture into an 8 or 9 inch pie plate.
  • 2 bake at 375 degrees f (190 degrees c) for 7 minutes. cool. if recipe calls for unbaked pie shell, just chill for about 1 hour.

Porridge With Coconut Milk With Caramelized Mango

  • 400 ml coconut milk
  • 1 teaspoon cinnamon
  • 1 tablespoon unbleached cane sugar
  • 1 pinch salt
  • 4 tablespoons cow milk
  • 1 tablespoon honey

  • 1 cup instant oats
  • 1 mango, cut into strips
  • 3 tablespoons honey
  • 1 teaspoon butter

  • 1 pour coconut milk, cow milk into the pot, add cinnamon.
  • 2 pour oat flakes, according to preferences (i add 3 tbsp).
  • 3 . bring to the boil, reduce heat and cook 3-4 minutes.
  • 4 take your porridge off the heat, add honey and butter, cover and leave it aside.
  • 5 melt butter in a pan, add honey. when it starts to caramelise, add mango and stir about 4 minutes.
  • 6 stir your porridge and put it into the bowls. serve with mango. enjoy your meal!

The Different Onion Rings

  • 1 to make the crêpe batter, in a bowl, whisk together the eggs and milk until fully incorporated. in a separate bowl, whisk together the flour and the cinnamon. next, slowly whisk the wet ingredients into the dry ingredients, moving from the inside to outside for a smooth batter. strain the batter through a fine sieve into a bowl and then whisk in the melted butter and rum. chill the batter, covered, in the refrigerator for at least 1 hour, and up to 24 hours.

Stuffed Bell Peppers With Creamy Walnut Sauce

  • 4 green bell peppers
  • 1/2 red onion
  • 1 (4 ounce) can green chilies
  • 2 garlic cloves
  • 1 (14 1/2 ounce) can red kidney beans
  • 4 teaspoons ground cumin
  • 2 tablespoons olive oil
  • 1 (15 ounce) can crushed tomatoes
  • 3 ounces feta cheese
  • 4 ounces shredded cheddar cheese
  • 1/4 cup chopped walnuts
  • 1/2 cup sour cream
  • 1/3 cup water
  • 1 teaspoon cinnamon
  • 4 teaspoons sugar

Recipe

  • 1 drain and rinse kidney beans. cut bell peppers into halves and remove seeds. broil bell pepper halves on both sides until skin begins to turn brown (around 5 minutes each side).
  • 2 put onion, kidney beans, green chiles and cumin in food processor and chop until almost smooth. heat frying pan on medium and add oil. add bean mixture for a couple of minutes stirring constantly. add crushed tomatoes and feta cheese and continue to stir for a couple more minutes. turn off heat but keep on burner while making cream sauce. stir frequently.
  • 3 crush walnuts in mortar, coffee grinder or food processor until a sandy texture. add walnuts, sour cream, water, cinnamon and sugar and stir until completely blended.
  • 4 fill broiled bell peppers with bean mixture, cover with shredded cheese and return to broiler until cheese is melted. cover warm peppers with the creamy walnut sauce and serve.
  • 5 (if 4 servings is too much reserve half the bean mixture and store in freezer for next time, and reduce all other ingredients by half.).
