Tony's Famous Banana Cake

Total Time: 50 mins Preparation Time: 10 mins Cook Time: 40 mins

Ingredients

  • Servings: 8
  • 3 bananas, that are very ripe
  • 1 cup demerara sugar, loosely packed
  • 2 eggs
  • 3/4 cup grapeseed oil
  • 1 1/2 cups all-purpose flour
  • 1 teaspoon baking powder
  • 1/2 teaspoon baking soda
  • 1/2 teaspoon salt
  • 1 tablespoon ground cinnamon
  • 1/4 teaspoon ground nutmeg
  • 1 cup walnuts, coarsely chopped

Recipe

  • 1 preheat the oven to 350 degrees f.
  • 2 in a large bowl, mash the bananas with a hand-help potato masher, leaving them chunky.
  • 3 add the sugar, eggs, and grape seed oil.
  • 4 continue to mash and stir with the potato masher until the ingredients are blended.
  • 5 sift the dry ingredients onto a piece of parchment paper and pour into the banana mixture.
  • 6 using the potato masher, blend gently until the flour is worked through.
  • 7 stir in the walnuts.
  • 8 pour into a 9" cake pan lined with parchment paper.
  • 9 bake 35 to 40 minutes, until golden and the tester comes out clean.
  • 10 let cool in the pan for 30 minutes.
  • 11 flip on a wire rack and cool completely.
  • 12 serve with spiced rum creme anglais.
