Spicy Autumn Pie

Ingredients
- 1 9 inch pie shell
- 2 cups shredded unpeeled apples
- 1 cup shredded unpeeled zucchini
- 1 cup shredded carrot
- 1/2 cup chopped walnuts
- 3 tablespoons flour
- 1 1/2 cups packed brown sugar
- 1/4 cup butter, melted
- 2 teaspoons cinnamon
- 1/2 teaspoon nutmeg
- 1/4 teaspoon salt
- 1 tablespoon lemon juice
- 1 teaspoon vanilla
- 1 teaspoon orange zest
- 2 eggs, beaten
Recipe
- 1 in a large bowl, combine apples, zucchini, carrots, and nuts with flour; toss to coat.
- 2 in medium bowl, beat brown sugar and butter until well blended.
- 3 mix spices, salt, vanilla, lemon juice, orange peel, and eggs together.
- 4 add to apple mixture, mix well.
- 5 spoon into pie crust-lined pan.
- 6 bake at 425 degrees for 45 to 50 minutes.
- 7 serve warm with whipped cream.
