Tomato Butter

Ingredients
- 10 lbs of ripe tomatoes
- 2 cups vinegar
- 3 cups celery, finely chopped
- 2 -3 apples, sliced or chopped
- 1 tablespoon coarse salt
- 1 tablespoon whole mixed pickling spice
- 3 cups apple cider vinegar
- 3 lbs sugar
- 1 teaspoon cayenne pepper
Recipe
- 1 blanch tomatoes; peel, then chop or slice them, then put them into a large pot.
- 2 pour vinegar over tomatoes & let it sit overnight.

- 4 add celery & apples and boil until thick, stirring occasionally.
- 5 take the coarse salt & mixed pickling spice and place then in a cheesecloth bag.
- 6 add apple-cider vinegar, spice bag & cinnamon sticks to tomatoes.
- 7 now add the sugar & cayenne. boil again for 10 to 15 minute or until the mixture has thickened.
- 8 remove the spice bag & the cinnamon sticks.
- 9 adjust the seasoning.
- 10 pour mixture into sterilized jars & seal.
