Tomato Butter

Total Time: 1 hr 30 mins Preparation Time: 30 mins Cook Time: 1 hr

Ingredients

  • 10 lbs of ripe tomatoes
  • 2 cups vinegar
  • 3 cups celery, finely chopped
  • 2 -3 apples, sliced or chopped
  • 1 tablespoon coarse salt
  • 1 tablespoon whole mixed pickling spice
  • 3 cups apple cider vinegar
  • 3 lbs sugar
  • 1 teaspoon cayenne pepper

Recipe

  • 1 blanch tomatoes; peel, then chop or slice them, then put them into a large pot.
  • 2 pour vinegar over tomatoes & let it sit overnight.
  • 3 *.
  • 4 add celery & apples and boil until thick, stirring occasionally.
  • 5 take the coarse salt & mixed pickling spice and place then in a cheesecloth bag.
  • 6 add apple-cider vinegar, spice bag & cinnamon sticks to tomatoes.
  • 7 now add the sugar & cayenne. boil again for 10 to 15 minute or until the mixture has thickened.
  • 8 remove the spice bag & the cinnamon sticks.
  • 9 adjust the seasoning.
  • 10 pour mixture into sterilized jars & seal.
  • 11 *.
