Sweet Potato Pound Cake

Total Time: 1 hr 20 mins Preparation Time: 25 mins Cook Time: 55 mins

Ingredients

  • 3 cups all-purpose flour
  • 2 teaspoons baking powder
  • 1 teaspoon baking soda
  • 1 teaspoon salt
  • 1/4 teaspoon nutmeg
  • 1/4 teaspoon mace (optional)
  • 1/4 teaspoon cinnamon (optional)
  • 1 cup unsalted butter, softened
  • 2 1/2 cups cooked mashed sweet potato
  • 4 eggs
  • 1 1/2 teaspoons vanilla
  • 1 1/2 cups granulated sugar
  • 1/4 cup packed light brown sugar

Recipe

  • 1 preheat oven to 350 degrees.
  • 2 grease and dust with flour two 8 1/2 x 4 1/2 x 2 5/8 (larger) loaf pans.
  • 3 mix flour, baking powder, baking soda, nutmeg, mace, and cinnamon in a medium sized bowl.
  • 4 in a large bowl, beat at high speed with electric mixer, unsalted butter, granulated sugar and brown sugar until light and fluffy.
  • 5 at low speed, add sweet potato and eggs one at a time until well mixed.
  • 6 beat flour mixture into the sweet potato mixture.
  • 7 add vanilla and mix.
  • 8 pour batter equally divided into 2 loaf pans.
  • 9 bake for approximately 55 minutes.
  • 10 serve warm or cold and can be frozen.
  • 11 enjoy!
