Sweet Potato Casserole

Total Time: 1 hr 5 mins Preparation Time: 20 mins Cook Time: 45 mins

Ingredients

  • Servings: 10
  • 4 large sweet potatoes, cooked and peeled (i actually cheated and used three cans of yams!)
  • 2 tablespoons margarine
  • 1/4 cup light soymilk
  • 1/4 cup orange juice
  • 1 teaspoon vanilla extract
  • 1/4 cup sugar
  • 1/4 cup maple syrup
  • 1/2 teaspoon salt
  • 3/4 teaspoon freshly grated nutmeg
  • 3/4 teaspoon cinnamon
  • 1/4 cup margarine
  • 1/2 cup brown sugar, packed
  • 1/3 cup unbleached flour
  • 3/4 cup chopped pecans
  • 2 tablespoons maple syrup

Recipe

  • 1 preheat the oven to 350 f and spray a 2 quart casserole dish with non-stick spray.
  • 2 mash the sweet potatoes with the margarine until smooth.
  • 3 add the soymilk, orange juice, vanilla, sugar, maple syrup, salt, nutmeg and cinnamon.
  • 4 pour into prepared casserole dish.
  • 5 mix the topping ingredients together until well-combined.
  • 6 sprinkle over the casserole and bake for 45 minutes or until hot throughout.
