Roasted Plantains

Total Time: 40 mins Preparation Time: 10 mins Cook Time: 30 mins

Ingredients

  • Servings: 8
  • 4 ripe plantains
  • 1/2 cup fresh orange juice
  • 2 teaspoons brown sugar
  • 1 teaspoon ground cinnamon

Recipe

  • 1 preheat oven to 350 degrees f.
  • 2 lightly coat a shallow baking pan with non-stick cooking spray or butter/oil.
  • 3 slice each plaintain in half lengthwise, and then into 5 sections; remove peel.
  • 4 place plaintain pieces in prepared baking pan.
  • 5 pour orange juice evenly over plaintain pieces; sprinkle with cinnamon and sugar.
  • 6 bake for 25-30 minutes, or until tender.
