Roasted Plantains

Ingredients

- 4 ripe plantains
- 1/2 cup fresh orange juice
- 2 teaspoons brown sugar
- 1 teaspoon ground cinnamon
Recipe
- 1 preheat oven to 350 degrees f.
- 2 lightly coat a shallow baking pan with non-stick cooking spray or butter/oil.
- 3 slice each plaintain in half lengthwise, and then into 5 sections; remove peel.
- 4 place plaintain pieces in prepared baking pan.
- 5 pour orange juice evenly over plaintain pieces; sprinkle with cinnamon and sugar.
- 6 bake for 25-30 minutes, or until tender.
