Spiced Up Apple Cake

Ingredients

  • Servings: 8
  • 2 1/2 cups flour
  • 2 teaspoons baking powder
  • 1 1/2 teaspoons cinnamon
  • 1/2 teaspoon ground cloves
  • 1/2 teaspoon ground ginger
  • 1/2 teaspoon baking soda
  • 3 cups of peeled finely chopped apples
  • 1/3 cup raisins
  • 1/3 cup chopped walnuts
  • 3/4 cup unsalted butter
  • 1 1/2 cups packed dark brown sugar
  • 1 teaspoon vanilla extract
  • 3 large eggs
  • 1/2 cup milk
  • 1/2 cup applesauce
  • syrup
  • 1/3 cup apple cider
  • 2 tablespoons sugar
  • 1 teaspoon lemon juice

Recipe

  • 1 combine flour, baking powder, spices, baking soda in bowl. in another bowl combine apples, raisins and walnuts, add 3 tablespoons of flour to mixture and toss to coat.
  • 2 combine the butter, brown sugar and vanilla in a mixing bowl and cream until the mix is creamy. beat in the eggs, stir in the milk and applesauce.
  • 3 add the remaining flour mixture to the butter mixture beating until blended.stir in the fruit and nut mixture. pour batterr into a greased and floured 12 cup bundt pan. bake at 350 for about an hour or until toothpick comes out clean. let cake cool in pan for an hour.
  • 4 combine syrup ingredients in a saucepan, heat to a simmer. when the sugar dissolves remove form heat, set aside for 15 minutes.
  • 5 take out of pan. prick it all over with a skewer. brush the cake with the syrup until it has been absorbed. dust with confectioners sugar if desired.
