Port Poached Pears With Truffle Honey Mascarpone

Total Time: 40 mins Preparation Time: 20 mins Cook Time: 20 mins

Ingredients

  • Servings: 6
  • 2 cups ruby port
  • 1 vanilla bean
  • 1 cinnamon stick
  • 6 pears
  • 1/3 cup truffle honey
  • 1 lb mascarpone cheese

Recipe

  • 1 split vanilla beans and scrape out seeds.
  • 2 add seeds and pod to port in a 2 quart saucepan along with cinnamon sticks. warm gently to meduim heat.
  • 3 peel pears and quarter them. scrape out the core and place into port mixture.
  • 4 simmer until tender.
  • 5 whip honey and cheese together until well blended.
  • 6 drain pears and place on a serving platter.
  • 7 drizzle with additional honey and then pipe mascarpone rosettes on each piece.
