Sweet 'n Smoky Baked Beans

Ingredients

- 2 tablespoons olive oil
- 3 garlic cloves, chopped
- 1 medium onion, diced
- 1 medium red bell pepper, diced
- 1 (15 ounce) can pinto beans, drained and rinsed
- 1/2 lb firm tofu, cubed
- 1 teaspoon liquid smoke
- 1 teaspoon soy sauce
- 1/3 cup vegan brown sugar
- 1 teaspoon cinnamon
- 1 tablespoon chili powder
- 1/4 teaspoon fennel seed
Recipe
- 1 preheat oven to 400 degrees. prepare an 8x8 baking dish with cooking spray.
- 2 in a saucepan, heat olive oil, then add garlic. cook until slightly browned.
- 3 add onions and peppers. saute until onions become translucent.
- 4 add pinto beans, tofu cubes, liquid smoke and soy sauce. mix with onion and peppers.
- 5 stir in sugar and spices. cover saucepan with lid and simmer for approximately 10 minutes.
- 6 pour cooked mixture into baking dish. bake in over for 25-30 minutes.
