Sweet 'n Smoky Baked Beans

Ingredients

  • Servings: 4
  • 2 tablespoons olive oil
  • 3 garlic cloves, chopped
  • 1 medium onion, diced
  • 1 medium red bell pepper, diced
  • 1 (15 ounce) can pinto beans, drained and rinsed
  • 1/2 lb firm tofu, cubed
  • 1 teaspoon liquid smoke
  • 1 teaspoon soy sauce
  • 1/3 cup vegan brown sugar
  • 1 teaspoon cinnamon
  • 1 tablespoon chili powder
  • 1/4 teaspoon fennel seed

Recipe

  • 1 preheat oven to 400 degrees. prepare an 8x8 baking dish with cooking spray.
  • 2 in a saucepan, heat olive oil, then add garlic. cook until slightly browned.
  • 3 add onions and peppers. saute until onions become translucent.
  • 4 add pinto beans, tofu cubes, liquid smoke and soy sauce. mix with onion and peppers.
  • 5 stir in sugar and spices. cover saucepan with lid and simmer for approximately 10 minutes.
  • 6 pour cooked mixture into baking dish. bake in over for 25-30 minutes.
