Smith College Blueberry Crisp

Total Time: 55 mins Preparation Time: 20 mins Cook Time: 35 mins

Ingredients

  • 5 lbs blueberries
  • granulated sugar, 1 tablespoon
  • 4 ounces cornstarch
  • 1 tablespoon lemon juice
  • 1/2 teaspoon ground cinnamon
  • 2 cups water
  • 10 ounces soft margarine
  • 6 ounces all-purpose flour
  • 6 ounces rolled oats cereal
  • 1 lb light brown sugar

Recipe

  • 1 place blueberries, water, and lemon juice bring to a boil.
  • 2 combine sugar, cornstarch and cinnamon mix well.
  • 3 pour sugar mixture into boiling berries, stir well until thickened.
  • 4 remove from heat. pour into greased pan.
  • 5 cream together butter and sugar. add flour and oats mix until crumbly.
  • 6 spread evenly over berries
  • 7 bake at 325 for 35-45 minute.
