Rhubarb Vanilla Compote

Total Time: 15 mins Preparation Time: 5 mins Cook Time: 10 mins

Ingredients

  • Servings: 4
  • 4 cups rhubarb, diced
  • 1/2 cup sugar
  • 1/4 teaspoon cinnamon
  • 1/2 teaspoon vanilla

Recipe

  • 1 combine rhubarb, sugar and cinnamon in a medium saucepan.
  • 2 bring to a simmer over medium high heat then reduce heat to a gentle simmer and cook until the rhubarb begins to soften.
  • 3 remove from heat and stir in vanilla.
  • 4 serve warm or cold.
