Onion Marmalade

Ingredients
- 3 tablespoons olive oil
- 1 kg red onion
- 3 tablespoons demerara sugar
- 1/2 teaspoon pepper
- 1/2 teaspoon red chili pepper flakes
- 1/2 teaspoon cinnamon
- 1/2 teaspoon nutmeg
- 3 tablespoons red wine vinegar
Recipe
- 1 heat the oil in a saucepan over medium heat and saute the onions for 5 minutes.
- 2 add the remaining ingredients, except the vinegar, and cook for 5 minutes or until the mixture begins to caramelise.
- 3 stir in the vinegar and continue to cook over a low heat, stirring occasionally for 20 minutes.
- 4 transfer to a clean bowl and cool.
- 5 i'm not sure of the keeping quality of this, but we have used it for up to a week, kept in the fridge.
- 6 it was all gone after that!
