Moroccan Couscous (sbph2)

Ingredients

  • 1/2 cup whole wheat couscous
  • 1 1/2 teaspoons ground cumin
  • 1 teaspoon paprika
  • 1/2 teaspoon ground cinnamon
  • 1/4 teaspoon salt
  • 1/8 teaspoon fresh ground pepper
  • 1 pinch cayenne
  • 1 tomato, chopped
  • 1/3 cup red onion, minced
  • 1 tablespoon extra virgin olive oil
  • 2 teaspoons fresh lemon juice
  • 3 tablespoons fresh parsley, minced

Recipe

  • 1 prepare couscous according to package directions.
  • 2 in a small bowl, combine cumin, paprika, cinnamon, salt, pepper, and cayenne.
  • 3 fluff cooked couscous with a fork. add cumin mixture, tomato, onion, oil, and lemon juice; stir to combine. divide among 4 plates, sprinkle with parsley, and serve warm.
  • 4 makes 4 (1/2) cup servings; calories-100; fat- 4g; protein-3g; carbs-15g; fiber-3g.
