Persimmon Bars

Ingredients
- 1 cup raisins
- 1/2 cup butter
- 1 cup sugar
- 2 eggs
- 1 teaspoon baking soda
- 1 cup flour
- 1/2 teaspoon cinnamon
- 1/4 teaspoon clove
- 1/4 teaspoon salt
- 1 teaspoon lemon rind
- 1 cup nuts
- 1/2 teaspoon nutmeg
- 1 soft persimmon (make sure it's really really ripe)
Recipe
- 1 cream the butter and then beat in the sugar.
- 2 add the eggs one at a time and beat well.
- 3 peel and mush the persimmon, mix it with the baking soda, and then add to the creamed mixture.
- 4 add the flour, spices and salt.
- 5 blend in lemon rind, raisins and nuts.
- 6 turn into a greased 13 by 9 pan and bake at 350 degrees for 20-30min.
- 7 frost with your favorite icing.
