Persimmon Bars

Ingredients

  • 1 cup raisins
  • 1/2 cup butter
  • 1 cup sugar
  • 2 eggs
  • 1 teaspoon baking soda
  • 1 cup flour
  • 1/2 teaspoon cinnamon
  • 1/4 teaspoon clove
  • 1/4 teaspoon salt
  • 1 teaspoon lemon rind
  • 1 cup nuts
  • 1/2 teaspoon nutmeg
  • 1 soft persimmon (make sure it's really really ripe)

Recipe

  • 1 cream the butter and then beat in the sugar.
  • 2 add the eggs one at a time and beat well.
  • 3 peel and mush the persimmon, mix it with the baking soda, and then add to the creamed mixture.
  • 4 add the flour, spices and salt.
  • 5 blend in lemon rind, raisins and nuts.
  • 6 turn into a greased 13 by 9 pan and bake at 350 degrees for 20-30min.
  • 7 frost with your favorite icing.
