Sweet & Spicy Roasted Sweet Potatoes

Ingredients

  • Servings: 8
  • 1/4 cup brown sugar, firmly packed
  • 2 tablespoons olive oil
  • 1/2 teaspoon ground cinnamon
  • 1 pinch cayenne pepper
  • 1 teaspoon salt
  • 1/2 teaspoon pepper
  • 4 lbs small sweet potatoes, cut into 3/4-inch thick wedges (about 10)
  • 1/2 cup grated parmesan cheese (2 oz)

Recipe

  • 1 heat oven to 375 degrees f. in a large bowl, combine the sugar, oil, cinnamon, cayenne 1 tsp salt and 1/2 tsp pepper.
  • 2 add the sweet potatoes, sprinkle with 1/4 c parmesan and toss to coat. divide the potatoes between 2 large rimmed baking sheets and arrange in an even layer. sprinkle with the remaining 1/4 c parmesan and roast, rotating the pans halfway through cooking until deep golden brown and tender 50 to 60 minutes.
