Moroccan Carrots

Ingredients

- 1 lb carrot
- 1 1/2 tablespoons butter
- 1/4 cup slivered almonds
- 1 tablespoon sugar
- 1/8 teaspoon ground coriander
- 1/8 teaspoon cinnamon
- 1/4 teaspoon cumin
- 1 pinch cayenne
- salt
Recipe
- 1 slice carrots and cook in boiling salted water until tender - about 20 minutes.
- 2 drain.
- 3 melt butter, add almonds and cook over medium low heat, stirring, until a light golden color.
- 4 add carrots, sugar, coriander, cinnamon , cumin, cayenne and salt.
- 5 cook, stirring over low heat until most of the liquid has evaporated and carrots are shiny and glazed, about 3 - 5 minutes.
