Moroccan Carrots

Total Time: 40 mins Preparation Time: 10 mins Cook Time: 30 mins

Ingredients

  • Servings: 4
  • 1 lb carrot
  • 1 1/2 tablespoons butter
  • 1/4 cup slivered almonds
  • 1 tablespoon sugar
  • 1/8 teaspoon ground coriander
  • 1/8 teaspoon cinnamon
  • 1/4 teaspoon cumin
  • 1 pinch cayenne
  • salt

Recipe

  • 1 slice carrots and cook in boiling salted water until tender - about 20 minutes.
  • 2 drain.
  • 3 melt butter, add almonds and cook over medium low heat, stirring, until a light golden color.
  • 4 add carrots, sugar, coriander, cinnamon , cumin, cayenne and salt.
  • 5 cook, stirring over low heat until most of the liquid has evaporated and carrots are shiny and glazed, about 3 - 5 minutes.
