Sweet Potato Pecan Muffins

Ingredients

  • Servings: 12
  • nonstick cooking spray
  • 1 3/4 cups flour
  • 1/3 cup sugar
  • 2 teaspoons baking powder
  • 1 teaspoon cinnamon
  • 1/2 teaspoon salt
  • 1/8 teaspoon nutmeg
  • 3/4 cup cooked mashed sweet potatoes
  • 3/4 cup karo dark corn syrup
  • 1/3 cup corn oil
  • 2 eggs
  • 1 teaspoon vanilla
  • 1 cup chopped pecans

Recipe

  • 1 heat oven to 400°f
  • 2 spray muffin tin with spray.
  • 3 in medium bowl combine flour, sugar, baking powder, cinnamon, salt and nutmeg.
  • 4 in large bowl with mixer at medium speed, beat potatoes, corn syrup, oil, eggs and vanilla.
  • 5 stir into flour mixture till well blended.
  • 6 stir in nuts.
  • 7 spoon into muffin cups.
  • 8 bake 20 minutes till light brown and firm to touch.
  • 9 cool in pan on wire rack 5 minutes, then remove.
