Sweet Potato Pecan Muffins

Ingredients

- nonstick cooking spray
- 1 3/4 cups flour
- 1/3 cup sugar
- 2 teaspoons baking powder
- 1 teaspoon cinnamon
- 1/2 teaspoon salt
- 1/8 teaspoon nutmeg
- 3/4 cup cooked mashed sweet potatoes
- 3/4 cup karo dark corn syrup
- 1/3 cup corn oil
- 2 eggs
- 1 teaspoon vanilla
- 1 cup chopped pecans
Recipe
- 1 heat oven to 400°f
- 2 spray muffin tin with spray.
- 3 in medium bowl combine flour, sugar, baking powder, cinnamon, salt and nutmeg.
- 4 in large bowl with mixer at medium speed, beat potatoes, corn syrup, oil, eggs and vanilla.
- 5 stir into flour mixture till well blended.
- 6 stir in nuts.
- 7 spoon into muffin cups.
- 8 bake 20 minutes till light brown and firm to touch.
- 9 cool in pan on wire rack 5 minutes, then remove.
