Slow Cooker Cinnamon-sugar Almonds

Total Time: 2 hrs 5 mins Preparation Time: 5 mins Cook Time: 2 hrs

Ingredients

  • cooking spray
  • 1 1/2 cups granulated sugar
  • 3 tablespoons ground cinnamon
  • 1/8 teaspoon kosher salt
  • 1 egg
  • 1 1/2 teaspoons vanilla extract
  • 3 cups raw almonds

Recipe

  • 1 spray slow cooker liberally with cooking spray.
  • 2 combine sugar, cinnamon and salt; whisk well and set aside.
  • 3 in a large bowl, whisk egg and vanilla until frothy. add almonds and toss to coat thoroughly. pour in sugar mixture and again toss thoroughly to coat.
  • 4 pour coated almonds into slow cooker. cover and cook on high 2 hours, stirring every 20 minutes to prevent burning.
  • 5 spray a piece of aluminum foil or parchment with cooking spray. pour almonds onto prepared surface, spread out and let cool to room temperature. store in an airtight container.
