Paleo Carrot Banana Muffins

Ingredients
- 2 cups almond meal (or almond flour)
- 2 teaspoons baking soda
- 1 teaspoon celtic sea salt
- 1 tablespoon cinnamon
- 1 cup dates, pitted
- 3 ripe bananas
- 3 eggs
- 1 teaspoon apple cider vinegar
- 1/4 cup coconut oil
- 1 1/2 cups carrots, shredded
Recipe
- 1 combine dry ingredients.
- 2 blend bananas, dates, eggs, vinegar, and coconut oil in a food processor.
- 3 mix wet ingredients with dry and fold in carrots.
- 4 spoon into greased or lined muffin tins and bake at 350 degrees for 25 minutes (or 20 minutes for mini-muffins).
