Paleo Carrot Banana Muffins

Total Time: 35 mins Preparation Time: 10 mins Cook Time: 25 mins

Ingredients

  • 2 cups almond meal (or almond flour)
  • 2 teaspoons baking soda
  • 1 teaspoon celtic sea salt
  • 1 tablespoon cinnamon
  • 1 cup dates, pitted
  • 3 ripe bananas
  • 3 eggs
  • 1 teaspoon apple cider vinegar
  • 1/4 cup coconut oil
  • 1 1/2 cups carrots, shredded

Recipe

  • 1 combine dry ingredients.
  • 2 blend bananas, dates, eggs, vinegar, and coconut oil in a food processor.
  • 3 mix wet ingredients with dry and fold in carrots.
  • 4 spoon into greased or lined muffin tins and bake at 350 degrees for 25 minutes (or 20 minutes for mini-muffins).
