Spinach Borani

Total Time: 25 mins Preparation Time: 10 mins Cook Time: 15 mins

Ingredients

  • 1 medium onion, chopped
  • 5 garlic cloves, minced
  • 2 tablespoons unsalted butter
  • 1 teaspoon turmeric
  • 1 teaspoon ground cumin
  • 1 teaspoon hot sauce
  • 1/2 teaspoon sweet curry powder
  • 1/2 teaspoon ground cinnamon
  • 1 cup plain low-fat yogurt
  • 2 bunches fresh spinach, washed and dried

Recipe

  • 1 saute onion and garlic in butter until soft.
  • 2 add mixed spices and stir in hot sauce.
  • 3 blend yogurt into mixture.
  • 4 add spinach and cover; cook over medium heat until spinach is just wilted.
  • 5 remove from heat, mix well, and season to taste with salt and freshly ground pepper.
