Onion Marmalade

Total Time: 50 mins Preparation Time: 20 mins Cook Time: 30 mins

Ingredients

  • 3 tablespoons olive oil
  • 1 kg red onion
  • 3 tablespoons demerara sugar
  • 1/2 teaspoon pepper
  • 1/2 teaspoon red chili pepper flakes
  • 1/2 teaspoon cinnamon
  • 1/2 teaspoon nutmeg
  • 3 tablespoons red wine vinegar

Recipe

  • 1 heat the oil in a saucepan over medium heat and saute the onions for 5 minutes.
  • 2 add the remaining ingredients, except the vinegar, and cook for 5 minutes or until the mixture begins to caramelise.
  • 3 stir in the vinegar and continue to cook over a low heat, stirring occasionally for 20 minutes.
  • 4 transfer to a clean bowl and cool.
  • 5 i'm not sure of the keeping quality of this, but we have used it for up to a week, kept in the fridge.
  • 6 it was all gone after that!
