Pear-a-dise Muffins

Ingredients

  • Servings: 15
  • 1 cup all-purpose flour
  • 1 cup whole wheat flour
  • 1 1/2 teaspoons baking soda
  • 1/2 teaspoon ground cinnamon
  • 1 1/2 teaspoons baking powder
  • 1/4 teaspoon ground nutmeg
  • 1/2 teaspoon salt
  • 1 cup plain yogurt
  • 1/4 cup vegetable oil
  • 1/3 cup honey
  • 1 egg, beaten
  • 1 cup canned pears, sliced

Recipe

  • preheat oven to 375 degrees f (190 degrees c). butter 15 muffin cups, or line with paper liner cups.
  • mix together flours, soda, baking powder, salt, cinnamon, and nutmeg. stir pears lightly into dry ingredients.
  • in a large bowl, combine yogurt, oil, honey, and egg. mix in flour mixture until just combined. spoon into muffin cups.
  • bake for 20 to 25 minutes, or until done.
