Quinoa Pudding With Apricots And Pistachios

Ingredients

- 1 cup quinoa, rinsed
- 2 cinnamon sticks
- 1 cup water
- 3 cups almond milk
- 1 tablespoon honey
- 1 teaspoon orange blossom water
- 1/2 cup chopped dried apricot
- 1/4 cup chopped pistachios
Recipe
- 1 place the quinoa and cinnamon stick with the water and almond milk in a medium saucepan and bring to a boil over high heat.
- 2 lower the heat to low, cover with a lid and cook for about 12 minutes. remove from the heat.
- 3 stir in the honey and orange blossom water.
- 4 serve topped with the apricots and pistachios.
