Ukrainian Cheese Crust Pyrizhky

Ingredients

- 1/2 cup butter
- 1 cup cottage cheese
- 4 tablespoons sugar
- 1 cup sifted flour
- 1 teaspoon cinnamon
- 1/4 teaspoon salt
- 20 prunes, stewed
- 1/4 cup chopped walnuts
- 1 tablespoon honey
Recipe
- 1 cream the butter with the cottage cheese and sugar.
- 2 sift the flour with the cinnamon and salt.
- 3 combine both mixtures and mix well.
- 4 chill thoroughly.
- 5 pit the prunes, split into halves, and fill each half with a mixture of the nuts and honey.
- 6 roll the dough 1/8 inch thick and cut into rounds.
- 7 place the filled prune-half on each round, bring the edges together, seal, and shape into an oblong.
- 8 this is the traditional shape for pyrizhky.
- 9 place on a baking sheet, brush with melted butter, and make a slit on the top of each for the steam to escape.
- 10 bake in a moderate over 350 degrees f.
- 11 for 15 to 20 minutes, or until delicately browned.
- 12 yield: 40 pyrizhky.
