Ukrainian Cheese Crust Pyrizhky

Ingredients

  • Servings: 40
  • 1/2 cup butter
  • 1 cup cottage cheese
  • 4 tablespoons sugar
  • 1 cup sifted flour
  • 1 teaspoon cinnamon
  • 1/4 teaspoon salt
  • 20 prunes, stewed
  • 1/4 cup chopped walnuts
  • 1 tablespoon honey

Recipe

  • 1 cream the butter with the cottage cheese and sugar.
  • 2 sift the flour with the cinnamon and salt.
  • 3 combine both mixtures and mix well.
  • 4 chill thoroughly.
  • 5 pit the prunes, split into halves, and fill each half with a mixture of the nuts and honey.
  • 6 roll the dough 1/8 inch thick and cut into rounds.
  • 7 place the filled prune-half on each round, bring the edges together, seal, and shape into an oblong.
  • 8 this is the traditional shape for pyrizhky.
  • 9 place on a baking sheet, brush with melted butter, and make a slit on the top of each for the steam to escape.
  • 10 bake in a moderate over 350 degrees f.
  • 11 for 15 to 20 minutes, or until delicately browned.
  • 12 yield: 40 pyrizhky.
