Oatmeal Cranberry Breakfast Bars

Ingredients
- 2 cups quick-cooking oats
- 1 cup all-purpose flour
- 1 cup dried cranberries
- 1/2 cup cranberry juice
- 1/4 cup brown sugar
- 1 teaspoon cinnamon
- 1/4 teaspoon salt
- 1/4 cup peanut oil
- 7 tablespoons vegetable shortening
- 1 teaspoon vanilla extract
- 1/2 teaspoon baking soda
Recipe
- 1 preheat oven to 350 degrees f.
- 2 combine the vegetable shortening, sugar, and half of the juice and mix until creamy. an electric mixer works best.
- 3 add the remaining ingredients except the oats mix well.
- 4 add the oats and mix evenly.
- 5 spread the mixture in a 9x13 greased glass baking dish.
- 6 bake for 25 minutes or until golden.
- 7 remove from the oven and let cool.
- 8 cut into 12 bars.
