Oatmeal Cranberry Breakfast Bars

Total Time: 45 mins Preparation Time: 20 mins Cook Time: 25 mins

Ingredients

  • 2 cups quick-cooking oats
  • 1 cup all-purpose flour
  • 1 cup dried cranberries
  • 1/2 cup cranberry juice
  • 1/4 cup brown sugar
  • 1 teaspoon cinnamon
  • 1/4 teaspoon salt
  • 1/4 cup peanut oil
  • 7 tablespoons vegetable shortening
  • 1 teaspoon vanilla extract
  • 1/2 teaspoon baking soda

Recipe

  • 1 preheat oven to 350 degrees f.
  • 2 combine the vegetable shortening, sugar, and half of the juice and mix until creamy. an electric mixer works best.
  • 3 add the remaining ingredients except the oats mix well.
  • 4 add the oats and mix evenly.
  • 5 spread the mixture in a 9x13 greased glass baking dish.
  • 6 bake for 25 minutes or until golden.
  • 7 remove from the oven and let cool.
  • 8 cut into 12 bars.
