The Best Coffee Lover's Coffee Cake

Ingredients
- 2 cups all-purpose flour
- 2 teaspoons instant coffee granules (heaped)
- 1 teaspoon cinnamon, ground
- 2 cups light brown sugar, firmly packed
- 1/2 teaspoon salt
- 1/2 cup butter, melted
- 1 (8 ounce) carton sour cream, beaten
- 1 teaspoon baking soda
- 1 large egg, beaten
- 3/4 cup walnuts or 3/4 cup pecans, chopped
Recipe
- 1 combine flour, coffee granules, salt, baking soda, cinnamon and brown sugar in a large sized bowl.
- 2 mix well.
- 3 keep aside.
- 4 in another bowl, beat an egg until light and frothy.
- 5 add butter and mix well.
- 6 add the dry ingredient mixture alternating with the sour cream.
- 7 mix well.
- 8 add nuts.
- 9 mix.
- 10 pour into a greased 9 inch cake tin.
- 11 bake at 180c for 40 minutes or till a wooden toothpick inserted in the center comes out clean.
- 12 allow to cool completely on wire racks.
- 13 slice and serve for a wonderful breakfast dish to go with your morning or afternoon coffee.
