Slow Cooker Angostura-peach Jam

Ingredients
- 4 lbs peaches, peeled and finely chopped
- 1/2 cup lemon juice
- 2 (2 ounce) boxes dry pectin (or 1.75 oz boxes for a total of about 4 oz)
- 6 cups sugar
- 1 dash cinnamon
- 1 dash ground cloves
- 20 drops angostura bitters
Recipe
- 1 mix chopped peaches and lemon juice in the slow cooker.
- 2 sprinkle with pectin and let rest for about 20 minutes.
- 3 mix in sugar, cinnamon, and cloves.
- 4 set slow-cooker to cook for about 2 1/2 hours on low; stir twice during the cooking.
- 5 remove slow-cooker lid and cook an additional 2-3 hours over high heat (until it reaches desired consistency.) add angostura bitters toward the end of the cooking.
- 6 pack into sterilized jars and process in a water-bath canner for 10 minutes (or more, depending on altitude.).
